Tradition

Next to the knowledge of the great wine tradition of Santorini and through over thirty years’ experience in research and production, we have created a new, small, high-quality winery, housed in the reconstructed wine cave of Paris Sigalas’ family.

The target

Our vision is based on our belief that the potential of this large and unique vineyard has not been fully explored. Highlighting this multidimensional potential is our goal. OENO Π is designed for small production, 20,000 bottles per year, aiming at high quality that can express the complexity of the Santorini vineyard.

Equipment

The winery is equipped with small volume amphoras (750 and 1600 liter vats), so that each amphora corresponds to a selected vineyard. This is a continuation of the research that began in 2015 at Domaine Sigalas with the "Seven Villages" (Separate vinification of the Assyrtikos of each village). The vertical press is the traditional Campania press (a two-meter-diameter reel), distinguished for the gentleness they give to the must, a key characteristic of Champagne.

Tasting area

From July 2022, ΟΕΝΟ Π is ready to welcome anyone who wants to meet and taste the new work of Paris Sigalas as well as the wines of Domaine Sigalas. In a new tasting room and landscaped courtyard next to the sea, the staff and the winemaker himself can take you on a tour of their Santorini.
